Tamarind House opened in Surat in 2026 with a single idea: that India’s regional cooking deserves the care of a fine dining room. The recipes are inherited; the restraint is ours. Traditions, given somewhere to take root.

The recipes came first — carried through family kitchens long before there was a dining room to serve them in. What we have added is restraint: nothing on the plate that does not need to be there, and nothing taken away that mattered.
That shows in the detail. Every spice is ground in our own kitchen and every dal set to cook long before service begins. The range runs from the slow-cooked richness of the north to the bright spice of the coast, and every plate of it is vegetarian.

To prove that a wholly vegetarian kitchen gives up nothing — not richness, not ceremony, not occasion. The menu follows what is actually good right now.
The recipes, the spice blends and the service have been handed down rather than reinvented. We change a dish when it makes it better, and not to be seen changing it.
Whether it is a first visit or a fiftieth, the intent is the same: a proper table, unhurried service, and food you would happily order again next week.
The kitchen and the dining room are kept by people who tend to stay. Spices, dals and pastry are all worked on the premises, and the floor team is trained to let an evening unfold at its own pace rather than the kitchen’s.
